Canelones Foods has in place a fully documented HACCP (Hazard Analysis and Critical Control Points) based Quality Assurance System.
Our Quality Assurance System is continuously audited by Sanitary Authorities of the most stringent markets (USA, UE, Asia, etc), and by independent third party auditing companies.

The HACCP plan is a system focused on the production of safe foods. This plan is based on two pillars: GMP’s (Good Manufacturing Practices) and SSOP’s (Sanitation Standard Operating Procedures).
The GMP’s refer to production procedures, document handling, personnel training, buildings and installations, equipments (design and preventive maintenance), pest control, water and wastewater treatment, Traceability and Recall Program, etc.
The SSOP’s are written procedures which describe in detail personal hygiene, pre operative and operative sanitation of all existing equipment and installations.
Our training program is a key factor in maintaining both GMP and SSOP. QA Department is responsible of the training program.

Our in-house laboratory is also an important asset of our QA System. Chemical analyses are performed on all our products both raw and processed. Also microbiological testing is performed on working surfaces, operator hands and tools in order to monitor the hygiene conditions of both our operators and facilities. The raw materials, ingredients and finished products are also microbiologically tested as a verification process in our HACCP plan.
