The mandatory Official Veterinary Inspection is performed by staff from the Ministry of Agriculture, Livestock and Fisheries (MGAP). There is an approved equivalency with USDA Meat Inspection Procedures. The 24-hour Official Veterinary Service in Canelones Foods consists of one Chief Official Veterinarian, two Official Veterinarians and 15 Official Inspectors.

The Official Inspection begins with the ante-mortem in live animals and their traceability; is followed during the slaughter, deboning, packaging and shipping. Finally an Official Certificate of Inspection and traceability is issued.

The Official Veterinary Service at the plant is supervised and the documents are audited by a Head Veterinary of the Animal Industry Division of the MGAP.
